Containing 34% of cocoa blended with rich creamy milk, Cacao Barry Zephyr offers a very pronounced taste of cocoa without the often too sweet aftertaste found with certain white chocolates. It reveals a perfect balance between the rich taste of milk and cocoa butter from which it gets its exceptional smoothness. Zephyr is a slightly sweet White Chocolate with an intense milk taste. Zephyr is ideal for all applications, including confectionery (ganache praline centres, mouldings and coatings), in pastry (such as ganache, mousse or decorations), and in ice cream, sorbets and fondues.
